Mexican Menu (2): Main Course

(Choose one)

Green Chili Chicken Enchiladas
Corn tortillas filled with chicken, chiles, cheese and
chile sauce, rolled and baked, then topped with
green chile sauce. Sprinkled with the cotija.


Red Enchilada Casserole
Layers of tortillas, ground beef, refried beans,
cheddar cheese, Monterey Jack cheese, onions
and a red enchilada sauce. Sour cream optional.

Santa Fe Chicken
Boneless, skinless chicken breasts marinated in
a mixture of soy sauce, olive oil,chili powder,cumin seed,
ground coriander, cloves garlic,honey,white wine,lime juice and
chopped cilantro leaves then broiled. Garnished with sour cream,
slices of lime and ascallion firecracker, as well as a dollop of salsa.


Tex Mex Lasagna
Flour tortillas, ground beef mixture,ricotta cheese,
Monterey Jack cheese, Cheddar cheese, green onions, and
olives layered, topped with mozzarella cheese and baked
to a golden brown. Can be served with a side of salsa.
